Tuber melanosporum
The black truffle, a jewel of gastronomy, is a subterranean fungus (Tuber melanosporum) renowned for its intense aroma and unique flavor. Harvested mainly between November and March, it grows in symbiosis with the roots of certain trees, particularly oak. This culinary “black diamond” is a seasonal and precious product, sought after by gourmets around the world. France, particularly the Périgord, Drôme des Collines and Vaucluse regions, is renowned for the quality of its black truffles. However, Italy and Spain also produce this exceptional fungus during the same period, as do Argentina and Australia during the opposite season. Truffle harvesting, an ancestral skill, is carried out using specially trained truffle dogs.
Usage tips
Enhance your dishes with black truffle! This culinary gem, known for its intense aroma and unique taste, requires special care to preserve its delicate flavors. To get the best from it, avoid long cooking times or high temperatures, which may alter its taste. It is best used at the end of cooking or infused with cream, butter, etc. For an optimal tasting experience, we recommend using approximately 10 grams of truffle per person, or about 10% of the fat base used for infusion. Black truffle pairs beautifully with many ingredients: eggs, pasta, meats, fish and vegetables. Let your creativity run free and impress your guests! For optimal storage, keep your truffles wrapped in a damp cloth in the refrigerator.
Delivery information
Truffles are shipped from Monday to Thursday morning in refrigerated vehicles (Chrono Fresh) to ensure optimal temperature control. Fresh truffles are vacuum-packed with absorbent paper to protect them throughout transport. Labels are applied by hand as an additional mark of quality: parcels are prepared with the utmost care.
