Tuber brumale
Less famous than its cousin Tuber melanosporum, Tuber brumale is nonetheless a true gastronomic treasure. Hand-harvested in winter, this black truffle reveals a more rustic character. Its tougher, rougher skin contrasts with the finesse of melanosporum. Inside, its more pronounced marbling reflects its maturity and strong flavor. Its aroma, combining notes of undergrowth and hazelnut, offers a unique tasting experience. Perfect for lovers of authentic flavors, Tuber brumale enhances a wide range of dishes.
Usage tips
Tuber brumale is heat-resistant, unlike its cousin Tuber melanosporum, and can withstand high temperatures and long cooking times. It is best used throughout the cooking process or infused with cream, butter, etc. For an optimal tasting experience, we recommend using approximately 10 grams of truffle per person, or about 10% of the fat base used for infusion. Tuber brumale pairs beautifully with many ingredients: eggs, pasta, meats, fish and vegetables. Let your creativity run free and impress your guests! For optimal storage, keep your truffles wrapped in a damp cloth in the refrigerator.
Delivery information
Truffles are shipped from Monday to Thursday morning in refrigerated vehicles (Chrono Fresh) to ensure optimal temperature control. Fresh truffles are vacuum-packed with absorbent paper to protect them throughout transport. Labels are applied by hand as an additional mark of quality: parcels are prepared with the utmost care.
